On another note—I wish Paul had listed at least 10 reasons for meringue failing. I have never had a failed meringue—but my experience with them has been limited to making Baked Alaska in the 1980s.
I’m about to embark on more meringue adventures and I wish Paul had left some breadcrumbs!
